Award Winning Wilcox

Friday, 27 April 2012

As many of you may know, Wilcox Cider was delighted to receive second prize at the Royal Bath and West show in 2010. The prize was awarded for Wilcox's best Sweet traditional farmhouse Cheddar.

Wilcox Cider has been entered into the biggest cider competition in the country again this year! The competition takes place in the Orchard and Cider pavilion at the showground. If you're going,  keep an eye out for Wilcox's gallon in competition corner!

The Bath and West show is the biggest event in the rural calendar and is nearly here!  The 2012 Royal Bath and West Show takes place near Shepton Mallet in Somerset from Wednesday 30th May - Saturday 2nd June.
There's more happening than you think at the country's biggest rural festival and there really is something for everyone, from food lovers to families and farmers to fashionistas! There is also the country’s finest livestock and over 600 trade stands, National Cheese Awards and the UK’s biggest cider competition.

The vast food halls contain a huge variety of regional treats, and is always one of the most popular attractions at the show; from Cornish Cheese to Somerset Cider Brandy, Ice Cream made on the Mendip Hills and Welsh lovers will be in heaven!

Friday, 10 February 2012

Many of you may not know but we are regulars and proud to be apart of one of the UK's largest steam fairs in the country, the one and only Great Dorset Steam Fair. It's not just our award winning cider that we take along, we also take our traditional 'Food Shack', serving the show with quality breakfasts, lunches and evening meals, which you can either take away, eat in our lovely marquee restaurant or dine outside in the beautiful sunshine (if you're lucky)!

We also serve, of course, a variety of our Traditional Farmhouse Cider, giving our punters a choice of either a sweet, medium or dry farmhouse. We serve from around midday to about midnight (depending on licences) every night of the show, so you can always rely on us for a cheeky midnight pint or two!

We will be attending the Great Dorset Steam Fair again this year, and you will find us in our usual spot!

We will look forward to seeing you all there!

Butternut squash soup with poached egg persillade and cheddar

Take butternut squash soup to the next level with Glyn Purnell’s delicious recipe.

For the soup
For the persillade
  • small bunch of sage, parsley, chervil and tarragon
  • 2 garlic cloves, finely chopped
  • 2 banana shallots, finely chopped

Preparation method

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Sprinkle some salt onto a baking tray and place the butternut squash on top. Roast in the oven for 30 minutes, or until soft. Once cool enough to handle, chop the squash into fine dice, discarding the seeds. Reserve one quarter of the chopped squash for garnish.
  3. Heat a saucepan until hot, add the olive oil then the roasted squash, carrot, shallot, garlic, thyme, bay leaf and sage and fry for 4-5 minutes. Cover with the stock, bring to a simmer and cook for 10 minutes, or until the vegetables have softened.
  4. Season with salt and freshly ground black pepper. Blend in a food processer until smooth and pass the mixture through a fine sieve into a clean saucepan.
  5. Poach the egg yolkss in a pan of simmering water at 65C-70C/150F-160F. Remove with a slotted spoon and set aside to drain on kitchen paper.
  6. For the persillade, mix the herbs, garlic and shallots together until well combined.
  7. To serve, place the egg yolks in flat soup bowls. Shave the cheddar with a potato peeler. Place the cheese over the yolk and sprinkle with the persillade. Place the reserved squash around the egg yolk then pour the soup around the edge and serve.
